Black bean and rice salad

 
                         BLACK BEAN AND RICE SALAD

    2       c            Cooked or canned black beans
                         -- (rinse & drained canned)
    2       c            Cooked rice
    1 1/2   c            Fresh cilantro
      1/4   c            Lime juice
      3/4   c            Oil
      1/2   c            Chopped onion
    2                    Garlic cloves -- crushed
                         Salt
                         Freshly ground black pepper
 
   Mix the beans, rice, and cilantro together in a bowl.
   Place the lime juice in a small bowl and whisk in the
   oil.  Add the onion and garlic and toss with the rice
   and beans.  Add salt and pepper to taste.
