    2 1/2  lbs           fresh peaches -- peeled and sliced
    3      tbsps         sugar
      3/4  tsp           salt
                         freshly ground black pepper -- to taste
    1 1/2  tsps          ground roasted cumin seeds
    1 1/2  tbsps         lemon juice
      1/8  tsp           cayenne pepper
 
 Combine all ingredients in a glass, ceramic, or stainless steel serving dish.  
 Serve at room temperature.
