   4             medium  tomatoes -- washed, cored
                         OR
   4              large  tomatoes -- washed, cored
                         Tuna Spread - any variation -- (see recipes)
   4             leaves  lettuce (optional) -- washed and dried
   2                     hard-boiled eggs, for garnish (optional)
 	  1/8	   teaspoon  paprika (optional) -- as garnish for the
     hard-boiled egg
   4             sprigs  parsley sprigs, for garnish (optional)
   3        tablespoons  chopped parsley (optional)
 
 Wash and core tomatoes. Prepare any variation of the Tuna Spread recipe in this
cookbook. If using the standard version, add chopped parsley (optional). Stuff
the tomatoes with the tuna mixture. Wash lettuce leaves and place each on
individual plates. Place a stuffed tomato on each of the lettuce leaves. Chill
for at least 20 minutes. On each serving, place half of an egg, cut into wedges
alongside the stuffed tomato, sprinkle with paprika. Garnish tomato with a
sprig of parsley (optional). Serve.
