      2/3  c             dried soybeans, lima beans, or green peas
                         salt
    1                    carrot -- shredded
      1/3  c             sweet pickle relish
    1      stalk         celery -- finely chopped
    1                    apple, peeled -- finely chopped
    3      tbsp          mayonnaise or salad dressing
      1/4  c             raisins
                         lettuce
 
 Sort and wash soybeans.  Place in a heavy saucepan or Dutch oven, and cover wit
 h water.  Bring to a boil; cover and cook 2 min.  Let soak overnight.
 Return beans to a boil; boil gently, not completely covered with lid, until ten
 der (1 to 1 1/2 hours.)  Add salt to taste.  Drain beans and chill.
 Combine soybeans with remaining ingredients except lettuce; chill.  Serve on le
 ttuce.
