12 ounces Cacique Brand Manchego cheese -- sliced
2 eggplants -- cut in 1/2" rounds
2 tomatoes -- cut in 1/2" rounds
2 onions -- cut in 1/2" rounds
1/8 cup olive oil
salt and pepper -- to taste
In an oven-proof container, arrange in layers, alternating the vegetables. Roas
t in a 350º oven for 20-30 minutes. Top with Manchego cheese and return to
the o
ven for an additional 5 minutes. Serve as a side dish to any roasted or grilled
meat.
