3 each ripe tomato -- diced
4 each scallion -- chopped
1 each green chile -- seeded and minced
(may sub 1/4 teaspoon cayenne)
2 teaspoons orange peel -- freshly grated
1 each orange -- sectioned and halved
2 tablespoons fresh lemon juice
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
salt, to taste
Combine all of the ingredients in a bowl, and let sit for 10 to 15 minutes
to allow the flavors to blend. Covered and refrigerated, this salsa will
keep for 2 to 3 days.
