1 c Dried red kidney beans
2 md Yellow onions, chopped
1 tb Oil
2 ea Tomatoes, chopped
1 t Salt
2 ts Turmeric
3 ea Chili peppers, ground
2 c Coconut milk
In a large pot, cover the beans with water & simmer
until they are tender. Saute the onions in the oil
until golden. Add, with the remaining ingredients, to
the pot & simmer for several minutes until the beans
are very tender & the tomatoes are cooked. Serve over
rice or a stiff porridge.
