1/4 cup vegetable shortening
4 medium onions -- chopped
3 cloves garlic or -- finely chopped
3/8 teaspoon instant minced garlic
2 to3 chopped carrots -- if desired
5 pounds lean ground beef or turkey
5 teaspoons salt
1/2 teaspoon pepper
3 tablespoons Worcestershire sauce
1 14 oz. bottl ketchup
1 14 oz. bottl "hot" ketchup
Melt shortening in a large skillet over medium heat. Add onions, garlic, celery
and carrots, if desired. Saute until onions are golden. Add ground beef. Stir
and cook until meat is browned. Add salt, pepper, Worcestershire sauce, ketchup
and hot ketchup. Cover and simmer 20 minutes. Drain excess fat. Cool. Put into
five 1-pint freezer containers, leaving 1/2-inch space at top.... Freeze. Use
within 3 months. Makes about 5 pints of Meat Sauce Mix Note- I froze mine in fr
eezer bags.
