Yield: 96 Servings
-Nancy Speicher DPXX20A
2 c Sugar
3/4 c Dark corn syrup
1/4 c Water
1/4 c Milk
1/3 c Butter or margarine
1. Lightly butter 3 large cooky sheets.
2. Combine sugar, corn syrup, water and milk in a medium-size heavy
saucepan. Bring to boiling over medium heat, stirring constantly. Cook,
stirring often, to 260F on a candy thermometer; add butter or margarine.
3. Cook, stirring constantly, to 280F on a candy thermometer. (A
teaspoonful of syrup will separate into threads that are hard but not
brittle when dropped in cold water.) Remove from heat.
4. Drop hot syrup from tip of teaspoon onto cooky sheets to form 1"
patties; or pour into a 9x9x2" pan, and, when almost set, mark into small
squares. When firm, turn out and break apart.
Makes 8 dozen 1" patties.
